Batch

Made ahead for a table, in a pitcher or a pot.

  • Scale by servings, but sweeten to taste at the end — a big batch reads sweeter than a single drink.
  • Pre-mixed stirred drinks need their dilution added up front: about 20 % water by volume, since there is no stirring with ice to supply it. Keep the batch in the freezer and pour straight into chilled glasses.
  • Anything sparkling goes in per glass, never into the pitcher — it goes flat within minutes.
  • Warm batches (mulled wine) stay below a simmer: boiling drives off the alcohol and turns the wine bitter.
