Ingredients: 2 ripe peaches (or plums or strawberries); 1 green apple; 2 tablespoons sugar; 1 bottle dry white wine, chilled; 1/3 cup brandy or orange liqueur (Grand Marnier); 1 handful mint leaves; 1/2 lemon, sliced into rounds; Sparkling water, to top, optional

Chop the peaches and apple into bite-sized pieces and put them in a large pitcher. Sprinkle with the sugar, stir, and let stand 20 minutes at room temperature.

Add the wine, brandy, mint and lemon rounds. Stir and refrigerate 1 to 4 hours; any longer and the fruit starts to go soft.

Pour over ice, add some of the fruit to each glass, and top with a splash of sparkling water if using.
