Hugo Spritz (Love and Lemons)

A drier Hugo with just half an ounce of elderflower liqueur, muddled with a mint sprig in the glass and left to infuse before the prosecco and soda go in.

1 mint sprig
1/2 oz elderflower liqueur (St-Germain)
4 oz sparkling wine (prosecco)
1 oz club soda or sparkling water

Instructions

Put the mint sprig in a large wine glass, add the elderflower liqueur and muddle gently. Let it infuse for 3 to 5 minutes.

Add ice, pour in the sparkling wine and club soda, and stir gently.
