Gin, lemon and simple syrup shaken with egg white and topped with soda. A dry shake before the ice builds the creamy foam that rises to the top.

Ingredients

Multiply

2 oz gin
3/4 oz lemon juice
1/2 oz simple syrup
1 egg white
Soda water, to top

Instructions

1.
Shake the gin, lemon juice, syrup and egg white without ice, hard, for 15 seconds.
2.
Fill the shaker with ice and shake for 30 seconds more, until cold.
3.
Strain into a glass and top with the soda water; the egg white foam forms on top. Serve right away.
