Bellini (A Couple Cooks)

A classic Italian brunch cocktail of sweet peach purée topped with chilled Prosecco, light, fruity and bubbly.

3 ripe peaches, or 1 pound frozen peaches (makes enough puree for about 6 drinks)
2 oz peach puree
4 oz Prosecco

Make the peach puree

  Peel, pit and puree the peaches until smooth, sweetening to taste if needed.

  Refrigerate for later use, or freeze for longer storage.

Pour the peach puree into a champagne flute, add a splash of Prosecco and stir to combine, then top with the remaining Prosecco.
