Sazerac (A Couple Cooks)

A New Orleans classic that stirs cognac and rye whiskey with a muddled sugar cube, Peychaud's bitters and a touch of absinthe, finished with an expressed lemon twist.

Ingredients

Multiply

3-4 dashes Peychaud's bitters
1 sugar cube
1 teaspoon absinthe
1 1/2 oz Cognac
1 oz rye whiskey

Instructions

1.
Coat a sugar cube with the bitters in a mixing glass and muddle until mostly dissolved, then add the cognac, rye whiskey and absinthe along with a handful of ice.
2.
Stir until cold and strain into a chilled rocks glass.
3.
Express a strip of lemon peel over the drink, run it around the rim, then drop it in.
