Pisco Sour (A Couple Cooks)

The Peruvian sour: pisco, lime, simple syrup and a whole egg white, dry-shaken for a thick foam that gets a few dashes of bitters.

Glass: coupe
Ice: up
Garnish: 3 dashes aromatic bitters

Ingredients

Multiply

2 oz pisco
1 oz lime juice
1/2 oz simple syrup
1 egg white

Instructions

1.
Shake the pisco, lime juice, simple syrup and egg white without ice for 15 seconds.
2.
Add ice and shake again for 30 seconds.
3.
Strain into a cocktail glass, letting the foam collect on top, and dash the bitters onto the foam.
