Tear-Free Tortillas

480 g (4 cups) All-purpose Flour
270g (1 cup + 1 tbsp) hot water
9 g (1 1/2 tsp) Salt

Mix ingredients to form dough. Keep mixing until it comes together.
Knead dough until all dry ingredients are incorporated into the dough.
Split dough into two identical balls to make it easier to work with, and keep kneading each ball until smooth.
Shape dough balls into equally sized logs and rest for at least 10 minutes.
Cut each log into three equal balls.
Roll each ball out, one at a time, until thin enough that bubbles start to form. Keep balls and formed tortillas covered.
Cook tortilla briefly on high heat for both sides. Transfer finished tortillas to an enclosure made from plates or cloths to keep steam trapped.
Serve once cool and pliable.
