Skillet Brownies

1.5 teaspoons vanilla extract
3 large eggs, at room temp

Start preheating the oven at 350F with the skillet and butter inside.
Get a large mixing bowl, and put the powder mix inside.
Crack and beat the three eggs in a separate bowl.
Once butter is melted, take the skillet out of the oven and carefully tilt the pan to grease the sides with butter. Pour most of the butter into the mixing bowl with the powder, leaving roughly two tablespoons behind to help prevent sticking. Give the bowl a mix to distribute and cool the butter.
Add the eggs and vanilla into the powder-butter mixture, and fold until no dry ingredients can be seen. Over-mixing here can lead to tough brownies.
Mix most (1 cup) of the chocolate chips into the batter, leaving some for the top.
Pour brownie batter into the skillet, flatten the top with a spatula, and top with remaining chocolate chips.
Bake for 30 minutes, or until a toothpick stuck into the middle comes out clean.
