Sausage Gravy and Biscuits

150 g self rising flour
75 g heavy cream
75 g Siggi's nonfat plain yogurt

Preheat the oven to 450 F.
Place the flour in a mixing bowl. In a separate bowl mix the yogurt and heavy cream together. While stirring the flour, drizzle in the cream and yogurt mixture until a cohesive but lumpy dough is formed, being careful not to over mix.
Set the dough on the counter and roll into roughly a 6-inch square. Perform a letter fold by folding the right third of the dough to the center and the left third of the dough to the center. Press the square down again and repeat the letter fold once more then roll out to a 6-inch square one last time. Cut the square into 4 biscuits.
Place the biscuits on a parchment-lined baking sheet and brush with a little more cream (or butter). Bake in the oven for 10-12 minutes until lightly golden brown.
Enjoy with sausage and biscuit gravy.
