Mediterranean Big Ass Salad

Nice mixed greens
2 Boiled eggs (1 per salad)
Shaved fennel, or other root vegetable
Roasted red bell pepper, cut into bitesize chunks
Sliced kalamata olives
Sliced pepperoncini
Sheeps milk feta, crumbled
Filet of canned mackerel
Fried panko breadcrumbs
Balsamic vinaigrette:
50g gr 3Tbsp rainy mustard
75g aor 1/3c aged balsamic
75g or 1/3c nice extra virgin olive oil

Hard-boiled Eggs
Bring water up to a rapid boil, add eggs, then reduce heat to a low simmer for 10min, then run under cold water to stop cooking. Peel and slice in half.
Shake dressing ingredients vigorously to combine, then toss with remaining salad ingredients.
