Masa Harina Cornbread

This cake-like cornbread is much different from the more gritty texture of regular cornmeal cornbread. Try spicing it up with mix-ins like diced jalapenos, or try chocolate chips to make a rich dessert!

  1. Preheat oven to 425ºF. Place the butter in a 9x9-inch square glass baking dish or 10 inch cast iron pan and put in the oven to melt. Keep an eye on it to make sure it doesn't burn.
  2. In a medium bowl, whisk together the dry ingredients.
  3. Make a well in the dry ingredients. Add eggs and whisk well, and then add milk. Gradually add melted butter to the milk mixture, making sure to leave about 2 tablespoons in the bottom of the baking dish.
  4. Mix the batter just until the flour is all moistened.
  5. Scrape the batter into whatever you're cooking in and spread it out with a spatula.
  6. Bake for 20–25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Serve hot with butter and maple syrup.
