Masa Harina Cornbread
This cake-like cornbread is much different from the more gritty texture of regular cornmeal cornbread. Try spicing it up with mix-ins like diced jalapenos, or try chocolate chips to make a rich dessert!
Instructions
- Preheat oven to 425ºF. Place the butter in a 9x9-inch square glass baking dish or 10 inch cast iron pan and put in the oven to melt. Keep an eye on it to make sure it doesn't burn.
- In a medium bowl, whisk together the dry ingredients.
- Make a well in the dry ingredients. Add eggs and whisk well, and then add milk. Gradually add melted butter to the milk mixture, making sure to leave about 2 tablespoons in the bottom of the baking dish.
- Mix the batter just until the flour is all moistened.
- Scrape the batter into whatever you're cooking in and spread it out with a spatula.
- Bake for 20–25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Serve hot with butter and maple syrup.
