   Bring the sugar and water to a simmer, stirring until the sugar dissolves.

   Take it off the heat, stir in the lavender and steep for about twenty minutes. Longer turns it soapy.

   Strain through a fine sieve, cool, and keep in the fridge for up to a month.

      Tea syrup: steep two tablespoons of black or chamomile tea instead of the lavender, for about ten minutes.
