1. Wash, dry and slice the cabbage into long shreds.
2. Heat a large skillet to medium and add in the olive oil and diced ham.
3. Sauté for a few minutes, stirring often to make sure all sides get a good sear.
4. Remove the ham and set it aside, then add in the onion and continue sautéing until they are starting to caramelize.
5. Add in the garlic, sauté for another 15 seconds. Add in the chicken broth to deglaze the pan, scraping up the brown bits of flavor.
6. Stir in the butter, apple cider vinegar, mustard and smoked paprika, then add in the cabbage, salt and pepper.
7. Stir to combine, cover and simmer on medium low for 10 minutes or until the cabbage is tender. Make sure to uncover and stir twice as the cabbage is cooking.
8. Stir the ham back in and cook for another 2 minutes, then serve.
